Celebrate the Chinese New Year in a traditional way, by adding ingredients that bring luck. Shrimps symbolize happiness and joy, and who doesn’t want that for their family? Here’s a fast, easy and delicious recipe that suits a casual family celebration.

 

Spicy Sichuan Shrimp Noodles

Ingredients

6 ounces of noodles of your choice

1 pound of medium shrimps

Salt and white pepper to taste

1 tsp of ground Sichuan peppercorns

3 tbsp of vegetable oil

4 thinly sliced large scallions  

2 tbsp of grated ginger

1/3 cup of soy sauce

3 tbsp of Chinese black vinegar

1 1/2 tsp of chili oil

Coriander for garnish (optional)

 

Directions:

1. Boil the noodles according to directions and make sure they are still chewy.

2. Add salt, white pepper and some of the Sichuan peppercorns. Heat up half of the vegetable oil in a large skillet or wok pan and add the shrimps. Cook for about 2 minutes and put them aside.

3. Add the remaining vegetable oil to the skillet, add scallions and ginger and cook for about a minute. Add the noodles and the remaining ingredients except for the shrimps and cook while stirring for another minute. Remove skillet from heat and add shrimps. Add the coriander garnish and serve right away.
