Kids in the Kitchen: Perfect Pancakes

The fabulous chefs at the Langham Xintiandi show us how to turn the simple pancake into a work of art. Dads take note - these pancakes are perfect for surprising Mom with breakfast in bed on Mother’s Day, May 11… or any day of the year!


225 grams cake flour 
30 grams sugar
2 grams salt
15 grams baking powder 
2 eggs
50 grams whole butter, melted
280 ml full cream milk 
10 grams orange zest (skin) 
½ vanilla bean


1 Combine all dry ingredients in mixing bowl.
2 Add eggs and whisk in milk.
3 Flavor with orange zest and mark of 1/2 vanilla bean.
4 Whisk in melted butter last.
5 Let mix sit for 20 minutes.
6 Heat frying pan, brush pan with melted butter.
7 Set two tablespoons of pancake mix in hot pan, cook 1.5 minutes on both sides. 
8 Turn to avoid pancake overcooking.
9 Set on plate, eat immediately.
10 Top with maple syrup, chocolate sauce, whipped cream or fruit.
