Recipe: Spanish Tomato and Strawberry Gazpacho

A few weeks ago, Urban Family hosted a fun cooking class at Raphael's at Shanghai Renaissance Yangtze Hotel. Here is one of the recipes the ten families got to try out under the direction of chef Alejandro Pico Bellas. This cold tomato and strawberry soup will keep you refreshed on any hot day this summer!

 

Spanish Gazpacho with Tomato and Strawberry

Ingredients

500g strawberries, washed, hulled and coarsely chopped

500g tomatoes, coarsely chopped

50g chopped green bell pepper

50g chopped cucumber (peeled and seeded)

50g chopped onion

1 clove fresh garlic

1 fresh jalapeño, seeds and stem removed

1 lime’s zest

20ml fresh lime juice

Balsamic vinegar

Salt

 

Instructions

Blend all of the ingredients together in a blender. Stir well and salt to taste.
