Recipe: Salpicon Seafood Salad

A few weeks ago, Urban Family hosted a fun cooking class at Raphael's at Shanghai Renaissance Yangtze Hotel. Here is one of the recipes the ten families got to try out under the direction of chef Alejandro Pico Bellas.

Ingredients

  • 400 g shrimps
  • 4 eggs
  • 1 onion
  • 1 green pepper
  • 1 red pepper
  • 100 g mussels
  • 50 ml olive oil
  • 10 ml lemon juice
  • 10 ml white vinegar
  • Mixed lettuce
  • Salt

Instructions

1. Boil shrimps and mussels. When cooled, peel the shrimps. Remove mussels from the shells. Discard the shells.

2. Boil the eggs for 12 minutes and remove the skin. Chop all of them.

3. Prepare the vegetables: Chop the onion, cut the pepper, removing the white membrane. Slice lengthwise into a long strip and cut to very small portions. Wash the lettuce with cold water.

4. Place all ingredients in a large bowl and toss with olive oil, lemon juice, vinegar and salt.

5. Serve cold.
